To start Easter Sunday, I once again rallied to attend the Tri Fusion Master's Swim at 8am. We swam a total of 2500 yards in my lane. The swim was hard for me today, I felt sluggish after biking and pilates the day before so really had to push myself. Luckily I was in a group event otherwise I would have probably ended my workout a little early! Pictured is a good friend, Laura, who I have roped into doing two triathlons this summer. She as been such a trooper. Laura has also proved to be a phenomenal swimmer and already graduated out of lane "3". I sure enjoy how this sport has shaped my body but not without a few achy knees and hips! I hope they improve and get stronger soon.

Happy Easter!
We had a great Easter celebration filled with hunts, remembering Jesus and spending time with friends and family. Joey had Easter Egg hunts galore! A hunt at preschool on Thursday, another hunt with playdate James and Logan on Saturday followed by the Denton hunt! We ended Sunday by treating my parents to dinner after their return from Thailand. Hard Boiling Eggs...just in case you need this!
Bring your eggs to room temperature before cooking. If the egg has been stored in the refrigerator it can be warmed gently under a flowing hot tap water. By bringing the eggs to room temperature, they're much less likely to crack in the hot water. Also the temperature of the egg at the start of the cooking process will affect the cooking time. An egg that is at room temperature at the start of the cooking process will require about 1 minute less cooking time than eggs taken directly from the refrigerator.
Gently place the eggs in a single layer in a pan with enough cold water to cover eggs completely (approximately by 1 inch). If you have two or three layers of eggs stacked up in a small pot, they may cook unevenly. Too much water will take too long for things to get boiling, which can throw off the timing and give your overcooked eggs. Too little water and parts of the eggs will be exposed and end up undercooked. NOTE: Use a tall pan, and limit cooking to 2 dozen eggs at a time.
Over high heat, bring water JUST to a rapid boil.

As soon as the water reaches a rapid boil, remove pan from heat and cover egg pan tightly with a lid.
Set timer for 17 minutes for large eggs or 20 minutes for jumbo eggs.
After exactly 17 or 20 minutes (depending on size of your eggs), remove from head and drain off water from the eggs. Transfer the eggs to the bowl of ice cubes and cold water. Let eggs cool at least 10 minutes in cold water, then drain either store in refrigerator or peel the eggs.

Happy Spring!
Miss Ashlyn, our niece! (Joey's cousin, of course!) Does anything say spring more than your favorite hat? Or there's the part where you can be outside after work and not freeze! Even better is the first run of the season (literally) outside tonight...felt pretty good, however, I'm a bit rusty! I felt the need for some new shoes so will need to consult my coach on that one. I am looking forward to my new workout schedule and feel inspired to fit more into my day. A special shout out to Jessi for her support!

Snoqualamie Family Weekend
Hitting the slopes on the west side this weekend with Tom's Family was a nice retreat! Tom and Joey drove over on Friday and I met up with them on Saturday at the lodge. On Saturday Joey snowboarded...and guess what, he loved it! We then had to convince him to ski on Sunday. I really want him to be able to stop and turn on skis first. After taking several runs Joey asked Tom, "Dad, have I done enough on my skis to get my snowboard back?" He was also a little tired on Sunday and took several "power bar" breaks on the slopes. The weather was gorgeous. We had a big spaghetti feast on Saturday night featuring Tom's sauce and his mom's! A great time was had by all. Day One...the snowboard

Baby Kate
As many of you know I was able to spend some precious time with my west side girls each evening after my tech conference ended last week. It was absolutely amazing to watch Kate become more alert, add more smiles to the day, grab at your fingers and happier! She will continue to use a feeding tube for another week or so along with bottle feeding of momma's milk. The doctors will continue to watch her valve as well. Thank you everyone for your prayers! It was also so nice to check in with my dear friend, Jill. It is so hard to know how to help a friend when they are not in your own city! Her family is adjusting back to home including their other lil' sweetie, Will, who is two. He is all about testing his boundaries and making sure he's getting his share of attention. Will also loves to give Kate kisses. Jill has showed him that he can give kisses to her toes anytime he wants!
